Fajitas Ingredient
- 200g Big Portabella Mushroom
- 100g White Onion
- 100g Green Bell Pepper
- 100g Red Bell Pepper
- 100g Yellow/Orange Bell Pepper
- 4 TBSP Vegetable/Canola Oil
- 3½ TBSP Seasoning
- 4 stems of Thyme (Optional)
- 2 stems of Fresh Rosemary (Optional)
- 2 stems of Fresh Oregano (Optional)
- 1 Lime
- ¼ Bunch Cilantro
Seasoning Ingredient
- 1 TBSP Dark Chili Powder
- ½ TBSP Paprika
- ½ TBSP Corn Starch
- 1 tsp Garlic Powder
- ½ tsp Onion Powder
- 1 tsp Cumin Powder
- 1 tsp Dry Oregano
- 1 tsp Sugar
- 1 tsp Salt
- ¼ tsp Cayenne Pepper Powder
- ½ tsp Crushed Red Pepper Flakes (Optional, If you like hot)
Recipe
- Combine all seasoning ingredients
- All weights are after cleaning and cutting
- Remove the stem from mushroom and remove all the black gill at the bottom using a spoon
- From bell pepper discard all the seeds
- Cut all vegetables same length (about 2-3 inches) and ⅜ to ½ inch wide
- Preheat oven to 375° F. Wait till oven preheats before adding oil and seasoning
- Add all vegetables to a pan in which it will fit in maximum 2 layers
- Add oil and coat it well so the seasoning will stick to it
- Add seasoning and mix well. Use tongs to mix
- Add Thyme, Rosemary, and Oregano stems
- Bake in oven for 15 to 20 mins till vegetables are little soft but still crunchy. Mix in the middle
- Once done take it out of the oven
- Take out Thyme, Rosemary, and Oregano stems
- Squeeze lime in it, sprinkle chopped cilantro, and mix well
- Server hot with warm fresh Chipotle tortilla, mexican crema, Mexican cheese blend, lettuce, tomato, cilantro, and lime wadges
Tips
- Chili Powder is not same as in Indian spice box. Chili powder is blend of different things and varies as much as garam masala
- Cayenne Pepper can be substituted with Indian pepper powder in spice box
- I prefer 'Cacique Crema Agria Mexicana (Sour Cream)' not the "Table Cream" or regular sour cream
- You can mix crema with little bit of water to make it thick pourable consistency
- To add some test add garlic powder in crema mixture
- Always buy block cheese and shred it at home
- I prefer mix of Cheddar, Monterey Jack, and Asadero Cheese in equal parts
- You can replace Yellow/Orange Bell Pepper with green pepper if you do not like lot of sweetness
Seasoning without Garlic and Onion
- 2 TBSP Paprika
- 2 tsp Chipotle Pepper
- ¼ tsp Cayenne Pepper
- ½ TBSP Corn Starch
- 1 tsp Cumin Powder
- 1 tsp Dry Oregano
- 1 tsp Sugar
- ½ tsp Salt
